Crushing on (this) Kimchi
Have you ever just randomly tried something and got taken aback by how unexpectedly awesome it is? I never really cared about kimchi, so when this one came my way I had zero expectations.
I was both intrigued and concerned. Has this gone wrong or is it just the fermentation process done right? I had no idea but I fell into the freshness, texture & perfectly balanced spiciness. It was like no kimchi I’d come across before. She made me want to do all sorts of things, like make *loaded kimchi fries and use her as a side to just about anything.
Maybe it makes me weird, but I kind of like that she's often missing when I want her, it makes it that much more special when our timing aligns…So keep your eyes open for her, she’s special and worth the wait.! I promise <3
* I made the kimchi fries without beef & used edamame instead ;)
